Pastry Labs & BakeshopsIf you're interested in baking, pastry and artisan breads, then this is the place to be. We offer 6 different Pastry Labs, 2 Bakeshops, 1 Chocolate & Sugar Artistry Lab, a highly unique Baking Formula Technology Lab found at no other culinary school, plus a separate Pastry Workshop Studio for refining and displaying your work. In each of these labs, you'll gain experience working with the most advanced, state-of-the-art specialty equipment and utensils. In addition, our Baking Formula Technology Lab contains 20 individual student ovens and 16 individual work stations. During each class in this lab, you'll experiment with 1 ingredient to discover how it affects the finished product. Other culinary schools give these answers in lecture, but at J&W you'll discover the answers through hands-on experience. Our bread labs contain state-of-the-art commercial ovens to make artisan breads and sweetdough. The Chocolate & Sugar Artistry Lab is climate-controlled and contains 8 marble tables and incredible specialty equipment to turn your spun sugar and chocolate into works of art.
