JWU Chef Grabs Silver at '06 Bread & Pastry Team Championships

In JWU Chef Mitch Stamm’s first major competition, he and Chef Jody Klocko surprised the competition by grabbing the silver medal in the 2006 Bread & Pastry Team Championship.  The event took place in Atlantic City, N.J. at the Atlantic City Convention Center, on October 21-22, 2006. Chef Stamm, and his team’s hundreds of hours of practice and preparation, shows an amount of dedication and achievement that is an inspiration to their colleagues and students of the College of Culinary Arts and the International Baking and Pastry Institute.  
 
Chef Mitch Stamm is a third year instructor at the IBPI JWU Providence campus.  His main focus is teaching Principles and Techniques of Bread Production. Before coming to the J&W Providence campus, Stamm was the Executive Pastry Chef at the Sun Valley Resort in Sun valley, Idaho. Chef Stamm learned his craft by studying at the Dunwoody Institute, The National Baking Center, San Francisco Baking Institute, The French Pastry School, and L’Ecole Lenotre in Plasir, France.

Stamm’s partner, Chef Jody Klocko is both a pastry chef and consultant. Voted one of the “10 Best Pastry Chefs in America” by Pastry Art & Design and Chocolatier magazines, Klocko added a great deal of expertise to the team. Chef Klocko won gold at the Coupe de Monde world Pastry cup in Lyon, France, as a member of the 2001 U.S. Pastry Team. He most recently received the silver medal at the 2005 food Network Chocolate Challenge.
