Tim Andriola

Tim Andriola visits the North Miami campus this July to take on the honor of becoming J&W’s latest Distinguished Visiting Chef. During his visit, he will prepare a four-course, Mediterranean dinner with reception and matching wines for 60 guests. Andriola, executive chef and co-owner of Timô Restaurant in Sunny Isles, Fla., has a reputation for being one of the most creative and innovative chefs in South Florida.

“Chef Andriola is a great fit for this honor considering his strong connection with the South Florida community and our focus on providing exceptional culinary education,” said Bruce Ozga, dean of culinary education for the Florida Campus.

The evening’s menu will include three hors d’oeuvres and four courses, including raviolo of blue crab with pine nuts and citrus brown butter, Mediterranean branzino with braised young fennel and tomato and shellfish broth, and pork loin with fresh milled white polenta and truffled pork shoulder bolognaise. Dessert will include Georgia peach and almond crostada with caramel peach gelato. Each course will feature matching wines paired by Rick Garced, founder of the United States Sommelier Association.

Tim Andriola discovered his love for cooking while working with his father at their family-owned restaurant. He apprenticed with Chef Ron Boucher at Ron’s Beach House as a teenager, where he decided to pursue a culinary career. A graduate of the Culinary Institute of America and Florida International University, Andriola developed a passion and appreciation for Mediterranean and Italian cooking while interning in Italy and Spain.

He has worked at some of the top kitchens in the United States, including Chez Panise, Charlie Trotter’s, Tra Vigne, Olives and locally at Chef Allen’s in Aventura, Fla., where he worked as the chef de cuisine for five years. Andriola served as the executive chef at Mark’s South Beach, which was named No. 1 in Miami by Gourmet magazine and best new restaurant by Bon Appetit.

Now exploring a solo venture, Andriola opened Timô Restaurant in Sunny Isles in 2003. The restaurant features a distinctive menu of contemporary Mediterranean-infused Italian cuisine and has been lauded by publications such as The South Florida Sun-Sentinel, The Miami Herald, The Miami New Times and Esquire magazine.
