
Study Abroad: Vitznau, SwitzerlandAcademic Focus: European Cuisine This program examines the extraordinary development of current European and Swiss culinary trends. Culinary students learn about and work with Switzerland's world-famous ingredients and products such as dried meats, artisan cheeses, and local fish. In addition, baking & pastry students learn about a wide range of traditional desserts. All students work with a variety of wines from Switzerland, France, Germany and Italy. You will gain a thorough understanding of these products by visiting markets, preparing dishes, and ultimately tasting your own creation. Industry leaders are also invited to join the program and share their angle and expertise on culinary topics. through this program, the courses will take time to examine the cultural context of the food you are preparing. Discussion revolves around Switzerland's geography, history, diverse population, and its influences on the culinary arts. With an interest in honing your professional skills, culinary topics discussed in traditional seminar format are augmented with practical kitchen courses for some great hands-on Swiss cooking. |
