Each student in J&W's baking & pastry program gets his or her own personal pastry tool kit. The kit includes assorted knives -- including 10-inch chef’s or French knife, plus paring and serrated knives -- plus tools such a peeler, garnishing tools, sifter and Xacto knife. The kit also has a compartment for the many specialty tools that are need for the diverse craft of baking and pastry, including cookie cutters, timer and thermometer, pastry wheel, decorating comb, bench scraper and bowl scrapers. Baking and Pastry Textbooks "Baking and Pastry Fundamentals" and "Baking and Pastry Formulas" is a two-volume set of proprietary textbooks developed by J&W that are used only at our 4 campuses. The books have been designed to be used in both the freshman and sophomore years -- and are used as resource and reference texts in the baking & pastry bachelor degree program. The Fundamentals text covers all aspects of the baking and pastry industry, including history, the functions of ingredients, and baking and pastry applications and practices. The Formulas text is a comprehensive book of formulas used for all baking and pastry courses. Beyond just a book of formulas, each pastry and baking technique used in their preparation is highlighted and defined. |
