
Sautéed Zucchini in Tomato and HerbsCarol Fortin of Hope, N.J., created this recipe
Small head of broccoli 1 large zucchini 1 tablespoon olive oil 1 cup tomato juice Pinch thyme Pinch basil Pinch oregano Pinch salt and pepper Blanch off broccoli. Wash and dry zucchini; cut into half moons. In medium sauté pan on high heat add olive oil and zucchini. Cook until ¾ done; add tomato juice and remaining ingredients. Simmer an additional 2 to 4 minutes and serve. A great side dish to the Grilled Norwegian Salmon with Tomato and Bell Pepper Relish. Serves 4 |
