Looking through the eyes of a chef. . .Marc Ehrler is a Master Chef of France and executive chef of the Loews Miami Beach Hotel. A native of Antibes, located on the French Rivera between Cannes and Nice, Ehrler trained with world-renowned chefs, including Alain Ducasse, Jacques Maximin and Andre Daguin. He says: "My involvement with Johnson & Wales University has been a pleasure; in fact it has become a real partnership, at the same level as the partership we chefs develop with local farmers, sharing the same passion, the same mission.
"We all realize how serious our responsibility is; the students are the future of our profession. I regularly come to the school to address classes, trying to share some of the reality we face in today's kitchen, hopefully creating excitement for the new talents Johnson & Wales produce. The instructors have the freedom to come and tour our kitchen, with or without students, understanding our needs and collaboration; it has become a true partnership we are proud of." |
